How does fermentation work?

Fermentation is one of the world's oldest preservation techniques. It is essentially a controlled fermentation process, similar to the one used to make sauerkraut. New Chapter uses a unique two-step method for fermentation. First, a suitable yeast strain (the probiotic Saccharomyces cerevisiae) is mixed with natural carbohydrates from plants. The appropriate vitamins and minerals are then added. To further stimulate fermentation, non-GMO soy and unprocessed whole foods such as alfalfa, carrot and orange peel are added. The yeast absorbs the vitamins and minerals into its structure.

Tropical fruit is then added to the fermentate to slow the fermentation process somewhat. To complete the process, probiotic bacterial strains are added again under gentle heating.
