Lychees in Indochina
In 1923 the French microbiologist Henri Boulard isolated a yeast from the skins of lychees and mangosteens in what was then Indochina. According to tradition, he saw how people there chewed the skins or made tea from them. The yeast was named after him: Saccharomyces boulardii, a variant of the yeast that is also used to brew beer and make bread rise.
