New Chapter was founded in 1986 by herbalist Paul Schulick, who at the time ran a natural food store in Brattleboro, Vermont. Fermentation: nutrients from whole foods
New Chapter (NC) builds its multivitamins around a fermentation process similar to the production of fermented foods and beverages. Just as fermentation enriches ordinary foods into superfoods such as yogurt, miso, and kombucha, NC begins each multivitamin with high-quality organic whole foods, nutrient-tested ingredients, and organic yeast.
NC’s patented fermentation method surrounds each high-quality vitamin and mineral with organic Saccharomyces yeast and a nutrient-rich whole-food broth, with the yeast integrating the nutrients to create a nourishing whole-food-based form. This process is similar to making sourdough bread. If you eat salt on its own, it is overwhelming. But when it is fermented with whole-food ingredients, it is readily absorbed.
Fermentate (growth medium) included
New Chapter multivitamins and individual nutrients are blends of fermented nutrients PLUS the growth medium in which they were cultivated, also known as fermentate. Including the fermentate provides unique compounds produced during fermentation by the friendly Saccharomyces cerevisiae yeast. The growth medium itself is packed with beneficial compounds from the fermentation process.
Saccharomyces cerevisiae is a powerful yeast that is essential to New Chapter’s fermentation process because its cells share many fundamental biological properties with human cells. Whole-food fermentation in 7 steps
Beneficial organic yeast (Saccharomyces cerevisiae) is first mixed with natural plant-based carbohydrates. High-quality nutrients (vitamins and minerals) are then added to the yeast solution. Next, organically grown, non-genetically modified soy and organic whole foods, such as alfalfa, carrot, and orange peel, are added for further fermentation.
The yeast then begins to integrate the mineral or vitamin by incorporating the nutrient into its cell structure. Enzymes from tropical fruits are then added to slow the fermentation and soften the yeast cell walls. Next, the beneficial bacteria B. bifidum, L. acidophilus and L. rhamnosus are added, and low heat is applied to complete the fermentation process.
Finally, individual fermented nutrients are blended into formulas and then tableted into whole-food fermented multivitamins.
